I'm planning on moving to a new server within the next 2 to 3 weeks. Just a little friendly warning as there might be a few hours of odd behavior when the process starts. I will try to have it done at night or weekend.

OK, my boat came with a 14x19 prop and was turning 5800 rpm's running 39-41 mph (gps) my local boat shop was good enough to loan me a prop to try which was 12 3/4x21 the boat now runs 5100 rpms at 51-53 mph(gps) at speed the boat seems "loose" I didn't lose a lot on the holeshot, but does anyone know if I order a 14" prop should my handle better? and would that also increase my holeshot due to more surface area/less cavitation?

It probably has more to do with the pitch from what you're describing.  You went from a 19 to a 21, which is a good jump.  If the motor is rated for a 14 inch prop, you should stick with that and try a 20 or 21 pitch to see if you get more control at high speeds.  Some specs about the boat and motor would help.  Some manufacturers have forums where you ask this stuff also.  I got some great advice about my prop situation from the basscat forums for example.  Hope that helps.

holeshot is the acceleration from standstill to plane(how fast the boat pops out of the water)

Just a heads up, Pay attension to the "cupping". I was also running a 14x19 prop at WOT 5600 RPM'S, but it was cupped. I found a "hazard" out on Erie and ripped the tip off a blade. So, while my original was getting repaired I bought a 14 1/2 x 19 figuring I was running right at my max RPM's. Come to find out, this new prop was not cupped. WOT was running 6300 RPM's. I ended up having it double cupped and pitched to a 21 to get it back down to 5600 RPM's.
